We registered for a travel system, but now I'm wondering if we should also register for a regular stroller and a convertible car seat also? And if we do do we register for 1 or two carseats since we have two cars?

I would keep the travel system on the registry and add a convertible for down the road or put the convertible in your second car. Then you end up with two car seats and one stroller.
I would rgister for another base for the carrier that comes with the travel system. That way you each have a base and the seat can go from one car to the other.
If your kid is going to be in one car most of the time I would only register for 1 convertible seat. If it will be split (one does daycare drop off, other does pick up for example) I would register for 2. Just know that not all carseats fit in all cars.

I asked the same question on a Facebook group. Within that group, the verdict seemed to be register for:
1. Travel system
2. Cheap stroller (like $20, thin fabric type stroller)
3. Toddler carseat
