I'm making a casserole tonight, and then we're pretty much eating frozen leftovers the rest of the week while DH is gone. Sigh...
I'm going to try to motivate myself to make some egg salad, too - I've been looking for a recipe similar to the egg salad I used to get from a deli back home, but haven't found a recipe that looks good. And I've really been craving that specific egg salad (pretty much the only egg salad I've ever liked).
Let's see...
Last night was huge salads loaded with veggies, eggs and blackened chicken. Probably our favorite meal.
Monday: DH's homemade pizza
Tuesday: We have friends coming over for taco salad and homemade guacamole
Wednesday: Burgers and sweet potato fries
Thursday: Probably salads again
Friday: Pork chops, corn and pasta salad
Saturday: out

This is really interesting! I've never cooked spaghetti squash, but have been considering a couple recipes. Definitely pinning this one to try out when DH is done the semester, and I can snag more than 20 mins of uninterrupted kitchen time.

tuesday: mini meatloaves
wednesday - turkey burgers
thursday - breakfast for dinner
friday - pizza
saturday - leftovers

I have plenty of frozen meals for lunches for DH and I. Dinners will likely be (in no particular order)
Sandwiches
Spaghetti
Burgers on the gril
Aaaaand I don't know.
DH is studying for finals, so I'm aiming for quick and easy meals.
M: Baked Chicken, Orzo with chopped broccoli and cheddar cheese. Maybe salads for DH and I.
T: Crock pot BBQ pork tenderloin, Veggie fried rice, yum!
W: Pasta bake - Bowtie pasta with alfredo sauce and chopped spinach. Salads on the side
Th: Burgers w/ pepper jack cheese & sweet potato fries
Fr: Spaghetti? Maybe.
Sat: TBD
Sun: Dinner with my parents
Monday- Honey chili lime chicken enchiladas
Tuesday- leftovers
Wednesday- sloppy joes
Thursday- crab cakes
Friday- we are going out to eat for my husband's birthday
Saturday- Stuffed shells
