We're trying to cut our grocery budget and are thinking of trying vegetarian/meatless meals a few times a week. I have a few recipes already, but I'm looking for more ideas. Any great suggestions?

Do you like indian food? I love daal. We make ours with red lentils. Beans are cheap, so it ends up being a very inexpensive meal. DD actually likes it too (I add yogurt to make it less spicey).

I make tacos with just black beans (or any kind of bean) and corn. I simmer it with the seasoning just like I would the meat. H says he doesn't even miss the meat.

I would check out Happy Herbivore who has a lot of recipes that are made with everyday, low cost ingredients. Beans are definitely a low cost vegetarian staple.&n
