We're trying to cut our grocery budget and are thinking of trying vegetarian/meatless meals a few times a week. I have a few recipes already, but I'm looking for more ideas. Any great suggestions?

I made pasta primavera last week that sounds a lot like Susies post above. Its something you can pretty much add your favorite veggies. We used asparagus too because it was on sale.
I make tacos with just black beans (or any kind of bean) and corn. I simmer it with the seasoning just like I would the meat. H says he doesn't even miss the meat.
I would check out Happy Herbivore who has a lot of recipes that are made with everyday, low cost ingredients. Beans are definitely a low cost vegetarian staple.&n

One of our favorites is Caribbean black beans and saut?ed plantains, served with rice. It's really easy and hearty.
