I have two I am loving on lately.
DD has been eating a lot of avocado, but a lot for her is one tiny wedge, most of which ends up on the floor. So I've been using the rest of the avocado and making a sort of chicken salad with avocado, canned chicken, fresh cilantro, and lime juice. I've just been eyeballing how much I use of each, and it's delish every time.
Also I found a recipe for cookie dough Greek yogurt on Pinterest, and it's ah-maz-ing. Again with eyeballing, maybe 1/2 to 3/4 of a cup of Greek yogurt, maybe two tablespoons (or less) of peanut butter, and a little bit of pure maple syrup mixed all up, and then sprinkle chocolate chips on top. It's DIVINE. And I don't feel as bad about eating it because it's yogurt. Am I right?!

Yummy! I've been using the crockpot a lot lately.
Crockpot Chicken Tacos
1 can of black beans (drained), 1 jar of salsa, 1 can of diced tomatoes, 2 chicken breasts, 1/2 bag of frozen corn, some chilli powder (I like a lot!), cumin, garlic powder (or 2 cloves diced), cayenne pepper, oregano, salt, pepper.
Dump everything together in the crockpot and set it on low for 8-10 hours. The chicken shreds up with a quick stir. Serve with wraps, or it's great by itself, too!

This time I'm not leaving without you.
We've been doing quesedillas a lot, easy & G loves cheese & beans so its a hit all around. I made enchiladas using chili too and that went over well - used up the remaining tortillas & sour cream we had leftover.
Another one is potato spinach soup - just boil up potatoes, when they are done add chicken bouillion to the pot, you can blend or not depending on what texture, add in spinach & cook for a couple minutes then at the end add in a copule of slices of american cheese to make it creamy. Tastes great w/ some crushed red pepper on it.
Oooo, yum! I make chili chicken tacos every once in awhile (just chicken, salsa, chili powder, and adobe chilis), but this sounds like it's got a lot more deliciousness going on.
Oh, I love potato soup!
