only thing i could think of to go with the theme is making bows? i don't really think you need to worry, at 2 they just run around playing and not sharing.

This! We had DS's party in October and were able to get a bounce house for outside, which was a big hit- not sure what your weather is like. If you're indoors, maybe just set out a few activities (coloring with Minnie coloring books and crayons, some blocks, etc.). I don't think the kids have an attention span for real games!
Maybe see about a CD of the Mickey Mouse clubhouse. My DD loves that show right now and has to do the hot dog dance at the end everytime she watches it. I'm thinking about doing Mickey/Minnie for her party this year!
Might also want to try and google Minnie games or something like that. Good luck!
If you check pinterest there is a minnie pinata you can make, it's super super easy and mine turned out absolutely adorable! The kids went nuts for it.
Also, I have a ton of minnie mouse party stuff leftover if you are interested, I don't want it sitting around anymore (includes games, decorations, plates, napkins, candy, etc.) so I'll let it go for super cheap!! PM me if you're interested.

What about a pinyata and a pin the bow on Minnie game or something. At Ds 1st birthday it was pirate themed and the kids had a ball dressing up. I had hats and eye patches, necklesses and tattoos.
You could probably get those mickey mouse ears and some bracelets and bows.
Go to the party store and see what they have to offer!

-You could rent a bounce house or
-Make fruit loop necklaces
-Get a Mickey shaped cookie cutter and pre make sugar cookies and let the kids decorate them
-Pin the bow on Minni
-Hire a face painter to come out. I did this for my DD's 2nd birthday and it was her favorite thing. Only 7 kids but it made her party.
Also you can get the Mickey Mouse club house CD from Target to play at the party
