Share your Soups/Stews!

Edison loves soup.  I think he now loves using the spoon to feed himself.  My MIL had stuffed pepper soup yesterday and it was very yummy and Edison enjoyed it.  Totally looking for any other suggestions (Meal Planning Monday got me in the food mindframe).

  • I've made this many times and only modify it slightly.  I use Sage Sausage instead of Italian just because i don't like Italian sausage.  This is sooooo good.

  • Not exactly healthy, but a favorite around my house - Baked Potato Soup

    2/3 cup butter
    2/3 cup flour
    7 cups skim milk
    3 large baking potatoes (baked, cooled, peeled, and cubed)
    4 green onions, thinly sliced
    1/2 package bacon (cooked, drained, and crumbled)
    2 cups shredded cheddar
    1 cup Greek yogurt
    3/4 teaspoon salt
    1/2 teaspoon pepper

    In a large pot, over low heat, melt butter with some dripping from your bacon. Stir in flour. Continue stirring until smooth and bubbly.

    Gradually add milk, stirring constantly, until sauce has thickened.

    Add potatoes and onions. Continue to cook, stirring constantly, until soup begins to bubble.

    Reduce heat. Simmer gently for 10 minutes while still stirring.

    Add remaining ingredients. Stir until cheese is melted.

  • I have made a couple of soups recently that were big hits with Sophie.

    I love this Morrocan Carrot soup from epicurious.

    Also, this Summer squash soup from Smitten Kitchen. I decreased the butter and it still tasted very rich.  I also skipped the pistou this time.

  • Here are some recent favorites in my house:

    Lentil Soup - I make this about once a week for our lunches.  At daycare they've asked about it because he's always asking for more once he finishes. I don't always put sausage in, it depends on what we have on hand. 

    Minestrone Soup - This is LBB's FAVORITE soup.  He usually goes through about 3 bowls at a time. 

    Corn and Chicken Chowder - I made this soup at the beginning of LBB's soup phase and it might be why he likes soup so much.  He liked this one enough that I've made it a couple of times since.

     

    And this week I'm making a potato, kale, and sausage soup:

    • 1 tablespoon olive oil
    • 1onion, chopped
    • 2 garlic cloves, minced
    • 1/2 lb of sausage (ground or removed from casing)
    • 8 cups chicken broth
    • 1 bag of baby gold potatoes (a little over a pound), peeled and chopped
    • 1/4 teaspoon salt
    • 1 1/2 tsp Italian seasoning
    • 1/2 teaspoon chipotle chile powder
    • 1 bunch kale, de-stemmed and chopped 
    1. Heat olive oil in a pot over medium-low heat. Add the onion and saute for about 5 minutes, or until the onion is translucent.
    2. Add the garlic and cook just until you can smell the garlic (about 30 seconds).
    3. Add the sausage and cook until the sausage is browned.
    4. Stir in broth, potatoes, salt, and Italian seasoning and cook, partially covered about 20 minutes, until potatoes are tender.
    5. Mash the potatoes with a fork and stir in the chile powder and the chopped kale.  Bring to a boil, then lower heat and simmer, partially covered for 10-15 minutes.

    All of these are delicious and have been big hits in our house! The Provencal Stew takes a while to cook but it is worth every minute.

    I've made this before: Barley Chili (no beans) and I make a wedding soup that's basically just broth, little meatballs, spinach and pastina.
