Thanks for asking this question. I like Mimi too but wasn't sure about a formal name. My great aunts name was Mimi... I'll have to find out if that was her legal name. Also, I've never heard a gma being called mimi (I'm from the west coast).
My IRL name is Amy, but I became Mimi early on because that's how a close cousin pronounced my name, and it stuck among family. I've since, separately, encountered several small children who said "Mimi" instead of Amy by default. I'm not sure it makes as much sense as a *planned* NN, but it's not too much of a stretch.
PPs have covered any others I can think of. And I've heard of the grandma connection, but I've never actually known anyone who used that for a grandmother's name.

Pretty much anything that begins with M- or Mi- and has a strong I sound:
Michelle, Miranda, Mirabelle, Maxine, Miriam, etc.
I would warn you that lots of people use Mimi as a name for grandma.
