can anyone tell me the difference of deeming someone as a friend vs acquaintance does it change their view of the profile - because when i do a view as it seems that everyone sees the same regardless of how i have them marked?

It will show the same unless you change it in your settings. When you go to account settings you can set different groups to have different permissions. For example I have acquaintances to only be able to see certain wall posts and pictures while friends can see more and family can see everything.
When you set the permissions you can play with it and I believe there is an option to click view my profile as "blank group" sees it. This way you can check that it's showing only what you want.
