Leftovers?

I always notice that many of you make a different meal every night. Are you against leftovers or do you eat leftovers for lunch so there is no more left? I know some people are grossed out by leftovers and some have larger families so leftovers aren't an option. 

I NEVER cook every night and I feel like I save money when I cook in large portions and eat a meal twice (I could be wrong).  Even cooking two larger meals on a Sunday and freezing them in portions sounds easier.  Plus with having a LO, working full-time and keeping my house tidy I feel like I can use that time doing other things a couple days a week.  You know, like playing on TB or reading a good book.  LOL!

  • I cook a new meal every night. I eat the leftovers for lunch for the next 1-2 days. I'm horrible at coming up with things for lunch so I always get excited to have that food for lunch. And sometimes my husband takes leftovers to the office for lunch so he doesn't have to pay for food in their cafeteria.

  • I'm going to TRY (major emphasis on the "try" because, lets face it, God, and our children, laugh at our plans lol) to cook up 5 big meals this weekend and freeze in portions. We just got a chest freezer, so i am going to start using it. I have a ridiculous commute, get home at 7pm pick ds up from daycare and the second we are in the door he needs to eat, bath, bed. So leftovers from here on out for us. Also DH takes them to work for lunches.
  • H takes most of our leftovers to school for lunch.  We will usually try and make enough to get one night where I don't have to cook.

  • I'm kind of "anti" left overs!  Certain things I don't mind, and are actually better the next day...spaghetti, lasagna, soups, chili, things like that.  I think my issue with left overs are the sides.  I don't mind the 'meat' part of them necessarily but I have to make new sides most of the time.  I try to cook in smaller portions so that I'm not wasting food because I'm the world's worst about eating them.  The ex was great about them, he'd come up with things to make the them...but he also did 99.999% of the cooking.  For instance, left over mashed potatoes make great potato soup.

  • I take leftovers for work to eat for lunch/dinner (I work midnights). I love leftovers for lunch the next day, but we usually don't eat them for dinner.

  • Some meals make more than others - for example, if I make a soup or chili it's always a large batch. I usually make things like that on the weekends.

    On work nights, I make things like baked chicken, rice and a veggie ... I buy the individually wrapped chicken breasts from costco and I thaw out 4 of them for the meal (one each for DH and I, one for my lunch the next day and 1 for DD to eat for dinner and lunch the next day). I make just enough rice/veggie for us each to have a portion and then for DD and my lunch the next day. (DH eats lunch at the fire station). If I don't make chicken, I make some kind of turkey sausage, turkey burgers, fish, tacos etc.

    This week though, I made homemade mac & cheese last night so that gave enough for another meal. And on Tuesday, DH made a taco casserole has another meal left also. Which is a good thing since I'm going out of town this weekend and DH is on his own with DD!

  • We are a leftovers family. I make large portions on purpose. Why in the world would I want to have to cook more than I have to? DH doesn't mind at all unless I make WAY too big of a portion and he's eating the same thing way too many times.

  • We only cook what we need. TBH, I'm not a huge fan of leftovers. Nothing ever tastes as good the next day, so for most of the week, I try to set it up so that DH is only cooking as much as we need to eat. It also prevents us from overeating, which we're both prone to do.

    Edit: I realized once I hit post that I spent all weekend re-heating leftover mac n cheese, and it was delicious. So I mean, we do eat leftovers. But we've had a new meal each day this week, and I have loved it, so I'd prefer to do it this way.

  • It depends on what it is....last night I made cowboy beans and thought I would have leftovers...both DDs and DS ate a ton, so I had enough to send with DD for lunch at school, but not enough for leftovers.  I often under or over estimate - so let's say I cook Sunday, Monday, Tuesday - Wednesday is leftovers because I will have enough.  Or I might have a ton of food from Tuesday, so I will have soup, the kids will have leftovers from Sun and Mon and then Thurs is bonus no cook leftover night as we all eat what was left from Tuesday.

    Long winded way of saying I am down with leftovers but suck at estimating.

  • For lunch today, I turned some leftover garlicky spinach into spinach patties.  I do love leftover meatloaf on toast with ketchup!  I'm not a huge leftover fan, so it has to be something I either really like or can make "new" by turning into a different meal.

  • We have a new meal pretty much every night.  DH will eat anything, including leftovers.  I, on the other hand, will eat very few things as leftovers.  I do most of the cooking so I can cater to my food issue.

  • I am not the biggest fan of leftovers (unless we're talking soup), plus I really love to cook so fixing supper each night is "downtime" for me.  If I'm making a recipe that is meant to feed a lot of people (ex: casseroles), I'll either split it up and freeze half to cook later or I'll just halve the recipe.  Any leftovers we do have, we eat for lunch.

  • We actually love leftovers around here. Sometimes my husband will eat them for lunch the next day, but we usually keep them for dinner. I do enjoy cooking, but we have so much going on that I also like having the extra time to do other things, too.
