The middle seat is best. That way if you are hit from either side the carseat still hopefully will not be touched. If you have 3 rows of seating (like a van) I'm not sure which row.

Since we have side airbags in the car we will be using most of the time with LO, we really wanted to put our car seat in the middle. Our car manual says that you can't use the LATCH system in the middle seat, so we just belted the base in instead. (Both are equally safe, the latch system was just designed to be easier.) We still have 1"+ between the back of the front seats and the car seat in the middle position, so we're able to do this.
I think a lot of people forget about the extra room between the front seat and the car seat, so if you can't/don't want to put the car seat in the middle, and opt for the next best place behind the driver, make sure they're not butted up against each other when the tallest driver has the front seat adjusted appropriately.
