We have a gulliver crib and use an ikea mattress. We bought the VYSSA SPELEVINK and DD has used it for over a year now. It's a foam mattress. I find it easy to put the sheet on since I can lift and bend the mattress.
One our last vacation we rented a crib with a regular spring mattress and it was a pain in the rear to get the sheet on since the mattress didn't flex at all.
We have the Sundvik crib and we got the Colgate Classica III mattress. Yes, we know the mattress is pricier than then crib, but considering that DS sleeps on it for 12 hours a day and will be sleeping on it for a few years, we thought it was worth it. The foam mattress is very firm and has 2 sides - 1 for infant and 1 for toddler (less firm). The mattress itself is very light which makes changing sheets super easy.

Ditto all of this but swap Classica III for I. DS is two and it's still an awesome mattress! They're Greenguard-certified too (google it.).
