recipes for t-day leftovers?

We got them from two families. Any good ideas for meals?

    Turkey barley soup!  I have no idea how to make it, but we always had it after Thanksgiving and Christmas growing up.

    I think some version of chicken soup with the turkey should be pretty good. 

    Oh and DHs favorite is making giant sandwiches.  Turkey, stuffing, potatoes, gravy, all in a sandwich.

    I agree with turkey pot pie and turkey soups.
    You could even do some turkey taquitos.
    For mashed potatoes you can make potato cakes.
