Making Pudding with Non-Dairy Milk Alternative

I've tried to make pudding (instant) with a milk alternative twice ( almond milk and now rice milk) and it isn't thickening up. I don't know what I'm doing wrong...any suggestions? Thanks!

  • Instant pudding needs a protein found in cow's milk to coagulate. I don't know of any instant pudding that will thicken with a substitute. You may have better lucky with "cook n' serve" puddings or buying premade vegan snack packs.

  • Thanks!! I've read on several blogs that you can use milk alternatives so I thought I was just doing something wrong ( but they must just be eating really runny pudding!). My kids do love the Zen almond milk pudding but its expensive and we can only find one flavor, so I was looking for an alternative... I will try the cook and serve. Do you know of any other vegan (and soy and peanut free) brands that make snack packs?

    OP, what about adding brown rice protein powder along with the milk substitute?

  • I've made Dr. Oetker pudding (I buy it at Whole Foods) with Coconut milk and it worked out just fine.

  • poor less diary alt. in it; its runny because its being based off milk. less= less runny.

  • I just put it in the freezer for a little while.  I've not had luck trying to get it to set.

  • Thank you everyone for the suggestions! I tried the cook and serve with almond milk and it came out okay, still a bit thinner than it should be. I will try Dr. Oetkers and I also be they would like it slightly frozen.

  • I use a box of instant pudding ( the smaller boxes) and a can of light coconut milk. I let it set overnight usually and it works fantastically.
