I've tried to make pudding (instant) with a milk alternative twice ( almond milk and now rice milk) and it isn't thickening up. I don't know what I'm doing wrong...any suggestions? Thanks!
Instant pudding needs a protein found in cow's milk to coagulate. I don't know of any instant pudding that will thicken with a substitute. You may have better lucky with "cook n' serve" puddings or buying premade vegan snack packs.
Thanks!! I've read on several blogs that you can use milk alternatives so I thought I was just doing something wrong ( but they must just be eating really runny pudding!). My kids do love the Zen almond milk pudding but its expensive and we can only find one flavor, so I was looking for an alternative... I will try the cook and serve. Do you know of any other vegan (and soy and peanut free) brands that make snack packs?
Thank you everyone for the suggestions! I tried the cook and serve with almond milk and it came out okay, still a bit thinner than it should be. I will try Dr. Oetkers and I also be they would like it slightly frozen.

OP, what about adding brown rice protein powder along with the milk substitute?
