We are saving up for a latex mattress to replace our current mattress-- my queen-size pillow top spring mattress I have had since I was 16. The off-gassing of foam is a concern in some circles, while coils are uncomfortable. Plus, the latex comes with a wicked warranty.
Edit: Oops. I totally didn't realize we were talking about crib mattresses. (Baby brain at its finest) Still, organic here.
I'm choosing foam because they're lighter and should make changing the sheets easier.
Ditto this. We have foam for DDs and I want to look for foam twin mattresses for them too. I had one growing up and it held up great! Didn't get rid of it until after grad school. It also made moving a lot easier. :-)

I read in Baby Bargains that one isn't better than the other, but foam mattresses are cheaper. However, regardless of whether you are going for foam or coil, you should try to get a firmer mattress as opposed to less firm. So for foam, that means higher density is better.

Nov siggy challenge: animals eating Thanksgiving food
Do some reading on the off-gassing from foam mattresses and you may re-consider. The research evidence is actually very concerning. If you invest in one thing for baby, it should definitely be a safer mattress preferably organic considering how much time they will spend sleeping on it. Just a thought.
