I don't. I guess it never crossed my mind to prep ahead of time as I am a bit of a procrastinator, especially when it comes to cooking. I'd love to hear other's ideas and get a good system going though!

I always prep a small container of veggies for the week. I like to put it out on the table when I am making dinner, so if the kids get hungry, they grab a celery, carrott, pepper, etc. I found they eat that with no complaints, so they get some extra veggies without me nagging. But past doing that, I do not prep anything else, I like to prep during the meal.
Yes. Right away when I get home from the store, I wash / cut carrots, celery, bell peppers, and cucumbers and portion into small baggies of mixed vegetables that I take with me to work each day.
