I made enchiladas this week and they were sooo good! I don't know how I am going to top them. Everything else seems lackluster after them.. haha... so, what's for dinner?!
A mini frozen pizza. I have class tonight after work so I need something I can heat up at my office. I really want a grilled turkey sub from Jersey Mike's but don't have time before class to go there. Maybe tomorrow??
I"m not sure yet. I have school tonight and won't get home until 8 PM - then have to workout.....Its just me tonight too (hubby is working) - so I'm gonna go with a veggie frittata!
I love eggs for dinner - and DH hates them - so I usually have them pretty often when he's not home for dinner!!
Tonight is church night and DH and I both teach classes...so it is our night to eat out. We usually eat at a local place where I get a yummy salad! However, it will be just me and the kids tonight and I have already had salad for lunch and could really go for Mexican...I am just worried about the salt with my BP and all. Well, we shall see! I wish I could cook some Yummo Mexican at home like you girls tonight! I hope everyone enjoys!
Dh pulled a fast one and picked up stuffed pork chops from our neighborhood butcher. He has a mushroom gravy for it and I'm picking up bread and making green beans and new potatoes from our csa.
Update - well that ended up sucking. The stuffing just didn't agree with me and the pork chops are what they normally are but with my random mouth feel sensitivity, it was too stringy for me to tolerate. The grocery line was insane so we didn't end up making the green beans I wanted. I ended up eating frozen corn and a dinner roll.
Soups and stews have been my number 1 thing that I want to eat since becoming pregnant! I'm also really into Mexican food lately, so this one totally fits the bill.

I can eat a ridiculous amount of mexican and italian and not get sick of it. oh and snickers, the only candy baby seems to be okay with.
