We currently have my DS1 on a GF diet. It's going pretty well so far but I'm wondering if those of you with experience could share some lunch idea with me. Breakfast and dinner don't seem so bad, but I have a hard time coming up with a filling GF meal for lunches. DS1 hates almost all meat, so that complicates things...

I make homemade mexican pizzas with corn tortillas a lot and find them to be really kid friendly (as well as adult!)
We do black beans or refried beans, cheese, and veggies in the middle. Cook them on broil until they start to brown, then flip. So quick, easy, and a fairly healthy, balanced meal.
I don't remember how old your LO is but here are some ideas:
Quesadillas using corn tortillas - you can make them with cheese, rice, beans, etc.
Annies Rice Pasta and Cheddar Cheese (this is macaroni and cheese but GF) - I will admit that this is one of 2 mac and cheeses that I will readily eat. :-)
Sandwiches on GF bread (I like Udi's bread)
Pizza with a GF crust (you can make it or buy a GF mix)
As long as you use GF noodles (I like the Tinkyada and Quinoa brands) you can do spaghetti and meatballs (make sure no gluten in the meatballs) or any other type of pasta dish.
Soup and rice mixed together but you just have to make sure that there is no gluten in the soup.
Grilled cheese on GF bread
Fruits and veggies are GF so you can just add that along with a main dish.

DS1 loves carbs and wants to only ever eat that, so going GF has meant a real stretch of the meal imagination! Store bought GF breads and pastas are pricey, so we'll keep those as treat meals for now
Have you had a peek in Superstore? It's still expensive, but less so than others. I also notice Costco has some offerings now as well.
