Leftovers! I'm off from cooking until Sunday We still have leftover pulled pork and cheesy chicken and rice, so we'll be finishing that up until tomorrow night, when it's take-out night.
We're going out for dinner, but I'm not sure where yet. I'm guess DH will pick O'Charley's because they have Falls City Beer on tap and he's crazy over that beer right now. If I get to pick it'll be the little mom & pop pizza joint near our house.
I started a meal in the slow cooker, but DH texted me and said he'd bring home pizza. I'm not going to argue with that! Pretty sure I can just reheat what I started tomorrow.

I made these the other day, and DH was sweating they were so spicy. I tend to eat a bit slower, so I thought they were tolerable.

Spinach & chicken sausage pizza

1 lb. cooked ground beef
1-2 cans refried beans (depends on how much you want to stretch it)
1-2 jars salsa (add more salsa if you add more beans)
Mix it together. It shouldn't be too runny.
Roll it in a tortilla. I usually end up with 10-12, but it depends on how big you want them. Make sure they're medium size or larger
Sprinkle them with cheddar cheese before rolling up the tortilla.
Bake on a greased cookie sheet at 350 for 10-15 minutes. This can vary if you like crispy or soft tortillas.

You can also make chicken chimichangas by using cooked chopped or shredded chicken and rice instead of beef and beans.
