Is chicken in a can safe? I know it sounds silly, but I can't seem to find the answer, and the OB's office is closed. I wouldn't think it'd have the same listeria issues as lunch meat, but...
Were you planning on eating it cold? Even lunch meat is ok if you cook it first. I don't know if it has the same concern but until you can get an answer from your OB I would heat it before eating it.

I think so, as long as the can is intact. I've been using it as a substitute for tuna in tuna noodle casserole, so I hope it's fine (especially since I'm heating it).
I guess I don't know for sure, but I agree with the other ladies. As long as you heat it up, it should be fine. I make buffalo chicken dip with canned chicken and honestly never gave it a thought.

My BFP Charts This time I'm not leaving without you.
I generally make chicken salad with it, but it doesn't get heated up. And it occurred to me last night that I might want to check on that b/c I plan on making it for a lunch meeting next month. Oh well. Thanks ladies!
This is my understanding of listeria: It infects vegetables and meat through soil and animal feces. Most deli meat is packed in the same facility where the animals are processed (for lack of a better word) so the chances of it coming into contact with the feces is high. Even though deli meats (hot dogs etc.) are pasteurized for storage and consumption and not actually cooked, the listeria can survive this method of preservation which is why they tell you too cook it before eating. Your can of chicken has been cooked and boiled at high temperatures before canned. So the chances of you getting listeria from a salad or piece of ham are much greater than the can of chicken, but then again canned food has its own slew of food borne illnesses to deal with. Just think "refrigerated" vs. "non" and that will answer your question 99%. I am much more skeptical of salad bars (I owrked in way too many restaurants to be fooled) and olive bars making me sick than deli meat I get from the grocer but everyone has their comfort level!
