What are your fav go-to dinners?

I need more ideas for my weekly meal lists.

  • My current favorite is:

    Boneless/skinless chicken breast with a slice cut in the side. Inside, stick two pieces of herb goat cheese (I buy Boursin, but whatever you can find) plus 2 fresh basil leaves. Rub the outside with olive oil, salt and pepper. Bake 375 until cooked through.

    For veggies, I like steamed broccoli with about 2 T olive oil, 2 T butter, 1 teaspoon minced garlic and the zest of 1 lemon. Lightly saute those ingredients until the garlic is aromatic but not browned and toss with the broccoli. It is delicious.

  • Italian Turkey Burgers (turkey, garlic, parsley, minced onion, oregano, egg, parmesan cheese and Italian bread crumbs).  I serve with steamed veggies and a salad or soup.

    pretty much anything I can make during the weekend. 

  • pork chops and potatoes.  i get different potatoes for variety, sometimes sweet, mashed, or the frozen baked wedges with rosemary, I think the brand is Alex.  I cover the pork in different stuff, but my favorites are maple (fake) syrup OR pineapple or apricot jam.
  • meatloaf -great recipe from light & tasty!  with cheesy veggies or scallopped potatoes.
