Lunch: Either PB on multigrain toast or cottage cheese and fruit (grapes, watermelon are his favorites right now)
Dinner: Pasta or macaroni and cheese would probably be tops. Others that he generally eats without fuss are turkey dogs or ham steaks, spinach cheese bites, pizza, and avocado.
Snack: He loves the Gerber Lil Crunchies best but also likes Goldfish
At any point in the day he could have: Yogurt, fruit, whole wheat naan, hummus, cheerios, Kix, Earth's Best Cereal bar, veggie or fruit pouch, applesauce, toast/slice of ww bread, Earth's Best oatmeal.
He also eats peas and carrots at dinner time, and might have a bit of turkey or chicken at lunch or dinner.
He's had other foods, but the foods listed are a typical day of meals for him.
ETA: He loves cheese, but we think it makes him constipated, and we haven't tried PB, yet. I have a food allergy in the family.

breakfast - yogurt and a waffle (he likes to dip the waffle into the yogurt) or a cereal bar (kashi, barbara's, tj's, etc.) with fruit
lunch - pb&j, he's a good eater and will eat pretty much everything but I am pretty lazy for lunches on the weekends, and this is what he asks for 99% of the time. :P Actually he usually asks for something like "bread with peanut butter, on top of jelly, on top of cheese." lol (he also gets a veg, sometimes fruit)
dinner - he'll eat anything. favorites tend to include anything with sweet potatoes or black beans, pretty much anything mexican. he also loves any type of taco/quesadilla, and he loves shrimp and meat.
snack - rice cakes and pb or crackers and cheese, any type of fruit
Breakfast: Baked apple or pear, strawberry, cereal or oatmeal, french toast
Lunch: peas and carrots with a chicken and pasta soup. Tortilla or wheat cracker. Close 2nd = Healthy Choice, Healthy Vision veggies (carrot, green bean and zucchini in sauce)
Dinner: Beans (pinto, black, baked, canellini, you name it!!!), chili mac with turkey, turkey and mashed potatoes, spaghetti and meatball, and more veggies
Snack: Goldfish crackers. :-( Oh well. At least he's a pretty good eater otherwise, and I'm trying to change that.

Lunch: Baked chicken breast, sweet potato, green beans
Dinner: Taco meat. black beans, corn, rice
Snack: strawberries or mango, yogurt melts
There are several other options I could have listed because my kid loves food, but these were the first ones that came to mind.

I was wondering when I read yours if your family was vegetarian. It sounds like you're doing a good job of getting protein in there, though!
Breakfast: Baby cereal with yogurt and banana
Lunch: veggie/turkey burger and boiled sweet potatoes
Dinner: whatever we're having, but he loves risotto and chicken
Snack: homemade broccoli bites, puffs, blueberries
Breakfast: waffles, blueberries, banana
Lunch: grilled turkey and cheese, apple slices, and avocado chunks
Dinner: rice and beans with ground beef and veggies (my own weird stir fry)
Snack: cheddar rice cakes, applesauce, and any squeezable fruit/veggie pouch he can get his hands on!
Breakfast: Pancakes or Bananas and Cheerios
Lunch: Pita bread with Hummus and diced tomatoes, blueberries or grapes
Dinner: Chicken, Butter noodles and Peas. He hates anything with rice.
Snack: Animal Crackers or Mum mums.

Lunch: Cheese quesadilla or grilled cheese, veggies, fruit.
Dinner: She is still not a huge dinner person, usually I can't get her to eat much. Baked chicken nuggets are a good go to for us.
Snack: fruit pouches, puffs, wagon wheels, cheese, applesauce.

Lunch - read with fig goat cheese from Costco or pulled chicken & bbq beans
Mac n cheese, corn on the cob
Veggie puree, peaches/mandarin oranges
Lunch: peas and carrots with a chicken and pasta soup. Tortilla or wheat cracker.
