I made a scrambled egg pocket for me because that's what appealed to me and I need to eat the eggs up before the yolks get any runnier; LO doesn't like eggs, so she got all-natural whole wheat mac-n-cheese with kale and tomatoes.
I'm going to make some seasoned baked new potatoes and then either grilled cheese or mac and cheese. Nothing fancy, and DH is working late, so it's "every man for himself" night.

I made a pot roast with potatoes/carrots/onions, and homemade yeast rolls. The rolls were the best part for me! I seem to be on a carb overload these days.
