Best Freezer Meals?

Little man is due in a little over 2 weeks and I want to knock out a few freezer meals/casseroles to have on hand for those first weeks home with baby. I have 2 little girls (4.5 and 3) who lucky eat just about anything.

I've already done lasagna, meatballs, enchiladas, and some soups. I need some new (and preferrably easy) inspiration while I still have the energy and motivation ;)

  • Along with making some meals, I cut up a bunch of chicken breasts and put them in zip locks in the freezer. You can also add BBQ or another type of marinade to them before you freeze.

    I also took a bunch of ground beef and ground it up. Some just plain and some with taco seasoning. 

    Oh, and Freeze muffins. They can go frozen straight into the microwave for 20 seconds and they are perfect.

    These bad boys are my absolute FAVOURITE!  They are super easy to prepare & are absolutely delicious; the tastiest in my opinion is the Cheesy Ranch Chicken.  I don't know if you have Publix supermarkets where you live, but this week they are running them Buy One Get One! 

  • any sort of Roast that you slow cook will freeze well, just throw it straight in the oven. 

     

    My spoiled husband refuses to eat left overs...............I don't know what I'm going to do!!

    I'll just get some meals started and freeze them, he will cook he just has the pallet of a teenager........ everything will be fried, salty,  & cheesy YUCK

  • It only took me about 2 hours to throw these together. I froze the meat and veggies separate since the thought of combining the two grossed me out a bit and I plan on cooking the entire amount at once, but I figure what's easier than a Crock Pot?

    OMG my husband is the exact same. I told him what I could do by preparing ahead of time and make life easy or not do the freezer meals and he might be in charge to cook. he agreed with himself cooking. unfortunatly his idea of cooking is pizza etc. I better be up and feeling good in a real hurry or hopefully my mom will bless me with her culinary skills for a couple weeks :)

  • Make meat sauce for a quick spaghetti or any other kind of pasta - I made tons of this. I"ve also froze muffins, calzones, soup, chili, smoked pork, cookies, enchiladas, and tator tot hotdish.

  • Chicken tatter tot casserol.  It is super easy!  You can find the recipe on Taste of Homes....  my kids love it!
