Typically I shred or pur?e carrots and zucchini into spaghetti sauce so DS can get some veggies in. Tonight I'm making chili, any suggestions of what veggies I can sneak in that won't alter the taste too much ? Tia!
I always add diced red & green peppers, celery and onions to my chili. A quick version of my recipe is:
Brown 1 lb ground beef with 1 diced onion, 3 stalks of celery diced, 1 diced green pepper, and 1 diced red pepper. Add salt & pepper to taste. Drain beef. Add 1 can tomato paste, 1 can diced tomatoes, 1 can tomato soup, and 1 can kidney beans. Add 2 tablespoons ketchup. Add seasoning to taste. I use ~ 1/2 tsp chili powder, 1/4 tsp oregano, a few shakes of celery salt. Add ~ 1 cup macaroni noodles and enough water to thin out as desired (I use ~ 2-3 cups). Cook over med-low heat, stirring occasionally, for a few hours to blend flavors.
Butternut squash is always a good choice b/c of it's mellow flavor & creamy consistency when pureed. I put it in pasta sauce all the time so I think it would work well in chili.
