I mix panko, regular breadcrumbs and dried herbs (basil, thyme, sage and rosemary) and some olive oil to moisten the breadcrumbs. Salt and pepper the pork chops then flour them, then egg, then the breadcrumb mixture. Brown them for a few minutes in oil on each side then put in the oven. They come out so yummy and moist that way.
I like to use a spice rub and a glaze to go on them.
Here is the recipe:
For the rub:
2 tsp. brown sugar (dark is best)
1 tsp. allspice
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. onion powder
1/4 tsp. cayanne
1/8 tsp. cloves
3/4 tsp. salt
1/2 tsp. pepper
For the glaze:
1 1/2 tsp. honey
2 tsp. white vinegar
1 tsp. tomato paste
Just rub the pork with the spices and cook them (I usually broil these) until they are about 3 minutes from being done. Then add the glaze and cook until done.
This is super simple but my husband loves them cause they don't dry out. Mix some flour with seasoning salt and pepper, dip both sides in the flour and make sure it's completely coated. Cook in a pan with hot olive oil over medium high heat until browned on both sides.
I think I stole it from the Pioneer Woman but I'm not really sure. I bet her recipe cooks them in butter instead of olive oil though.
I made some last week and they were so good and super healthy.... i put tyme, seasoning salt, pepper, rosemary, parsley, and a few other herbs(i can't remember them all) in a ziplock bag and coated the chops. I then put them in a foil lined pan and basted them every 15 min with a honey, brown sugar, dijon mustard glaze for about 45 min. They were so good, i paired them with steamed broc, and mashed pot.

these were SO good. Not healthy - bascially a chicken fried steak but with a porkchop, and then dipped in sauce. But seriously. So delicious!
