When do you prepare your meal & suggestions during nap transition

 LO might soon be going through the transition from 2 naps to 1. So, I might forgo the crock pot- or at least the longer cooking recipes.

 My kitchen is not located where I can see LO when he plays, and he can only play with the spatula and rolling pin in the kitchen for so long.
 Also, lately DH isn't home in time to help out with LO while I make dinner. (Either that or it's "throne time"- sorry if TMI!)
 Once LO wakes up I change his diaper and nurse him again. Then it's time for him to eat dinner in about an hour.

 I did recall that chili simmers for about an hour, and can make that during the nap before he might wake up. Also, some meatloaf recipes cook for an hour. 

 Any other suggestions for during the week? It is cold here now, so recipes that use the oven work out great.

  • Soups are good for low-maintenance cold-weather cooking. Chop/prep veggies during 1 nap time for the week and it shouldn't take as long to put it together. 

    Lots of casseroles can also be prepped in advance and just throw in the oven, too, if you like casseroles. Simple dishes like baked fish or chicken with a side salad (using your pre-chopped veggies) are also good for busy nights.

  • I try to prep for 2 meals at once-- today while my girls were eating lunch I chopped all the veggies for 3 bean chilli and turkey and dumpling soup-- then when I put DD2 down for her nap I made the dumplings and assembled the soups which took less than 15 minutes - while DD1 read. Both of these cook for 30 minutes but if they simmer longer it's no big deal. I put both in the fridge to have tonight after gymnastics and then tomorrow night too.

    Extra bonus is that both of these meals are easily doubled and make great leftover lunches and are freezeable.

  • I always try to make meals last two nights - I'll prep something whilew DD naps and make enough for two dinners. Our current favorite is pulled chicken:  boneless, skinless chicken thighs or breasts in a crock pot with a bottle of BBQ sauce. You can use it in sandwiches, salads, tacos, on pizza...

  • I do a lot of cutting/chopping during the nap if the recipe calls for it.  Otherwise I hope he entertains himself when the time comes.  If it's complicated and I need to have it on before DH gets home I put in a baby einstein dvd.  I don't have to be able to see him to know what he's doing when that's on!
