Pancakes made with Coconut Flour
I found this recipe on a food blog I follow. I was able to get about 10 pancakes out of a full batch and 5 pancakes out of a half batch. I used the Lose-It app (loseit.com) to calculate nutrition and here is what I got for one pancake:

So, 3 pancakes is one carb serving (and 1.5 protein). They are definitely a little different than a normal pancake (I want them to be a little sweeter - I used the honey option in the recipe), but they were still light and fluffy like a quality pancake! A good substitute if you are having a pancake craving.
**I can find coconut flour in the grocery store - sometimes it is in the organic/speciality section, other times near the baking stuff. I use Bob's Red Mill.
On a related note - did you know that pure maple syrup is better for glucose numbers that a lot of these fake syrups? I can do a small drizzle - 1-2 tsp (and count the carbs, of course) and it doesn't spike my numbers. Read the labels. Make sure the ingredient = pure maple syrup. The stuff made with corn syrup and flavoring will send your numbers through the roof. I can't do fake sweeteners, so sugar-free syrup just doesn't cut it for me. Having low carb pancakes like these lets me use some of my carb allowance for some delicious, real syrup when I am having the occasional breakfast treat.
