Toddlers: 12 - 24 Months

Help me w/ easy b-day casserole-type thing

DS's first b-day is Saturday and we're having about 10 people for dinner, all adults except for my kids. DD had a huge "winter ONEderland" party for her first b-day but the Dec. timing of DS's day and various family things mean he's getting a small party. We have stuff almost every night this week, and I really, really want to get the tree up on Saturday before the party, so I am kind of screwed on pulling this together. Am looking for a menu idea for a main dish casserole that I could put together Friday night and then just bake Saturday, to serve w/ veggie, salad, rolls, cake.

--Can't be spicy/Mexican (i.e. not enchiladas) for SIL

--No Mushrooms for SIL, unless I can layer them in one part but not the whole thing or something like that

--Can't be too tomato-ey (i.e. lasanga) b/c of DS's reflux

Ideas???? Some kind of white chicken lasagna?? Help!

  • This is so good.  I didn't use mushrooms or peas but added broccoli.  It was delish!

  • I do a chicken and rice casserole sometimes. It's super easy.

    Cook some white rice, mix in a couple tbsp of butter and spread on the bottom of a casserole dish.

    Boil a package of chicken, cut into smaller pieces and spread it over the rice.

    Mix 2 cans of cheddar cheese soup, 1 can cream of chicken, 1/2 cup of mayonaise and a splash of milk. Spread of chicken.

    Melt 1/2 stick of butter and mix with 1 cup of bread crumbs, put it on top.

    Bake at 350 for 35-40 minutes until the breadcrumbs brown and get bubbly.

    Sometimes I substitute one can of cheddar cheese soup for a can of broccoli cheddar and add some cooked broccoli in with the chicken and that's delicious. But DH doesn't like broccoli so I only do it when he's not home for dinner.

  • Mac n' Cheese.  You can throw some sort of meat in it if you are concerned about not having any.  I swear this recipe is the best ever.

  • Thanks, these are GREAT ideas! I actually am remembering now that I have a chix/rice dish recipe I could maybe make. I'm saving mac & cheese for DD's 1/23 b-day b/c that's her favorite. :)

  • I do kind of a chicken pot pie. Either one or two cans of chicken or a couple of chicken breasts chopped up or shredded. Put in a 8x13 glass pan and mix in some frozen mixed veggies (whatever kind you want, however much you want). Mix together either a 14oz container of chicken broth with some milk and a Tbsp of flour or a can of cream of chicken/mushroom soup with a can of milk, and add that to the chicken/veggies and mix together. Take a cup of bisquick mix and add enough milk to it to make a batter, and pour or spoon that on top. Bake in a 400 degree oven until the bisquick mix is baked and browned on top. You can do a lot of variations on this btw.
