Finger foods for DC - what freezes/keeps well?

What finger foods can I prepare on Sunday for the week & that will keep OK in the fridge/freezer?  I've never tried to save potatos that aren't mashed, and leftover steamed veggies don't sound very appetizing to me. 

I've never been much of a cook, so I feel like a fish out of water when figuring out C's foods.

  • Sweet potatoes freeze really well.  I cut them in cubes and roast them in the oven. 

    DD LOVES peas (which is funny because I don't), so I get the single serving frozen peas.  I always cook them according to the instructions, but I will often cook them one day and then put 1/2 the package in the refrigerator for the next day.

  • I made my own turkey meatballs and froze them - they're easy to take out one at a time for daycare, or evenings when we don't have a kid-friendly meal.  I've done as pp suggested with veggies and also with whole wheat pasta (the spiral kind, cut in half).  I've also bought a frozen veggie medly and just throw a few pieces of broccoli and carrots in the boiling water with some of the pasta.

    I'm really trying to make sure our dinners are something that we could give DS for lunch the next day, that makes things SO much easier.

  • I totally get the confusion over figuring out foods. It's really hard. I am off next week, so I think I am going to make some turkey meatballs and figure out some lunch combos. I know he loves broccoli and chicken, so I guess I could do that, too.

    I am most confused over how much he should be eating and how big to make the pieces!

  • We also used to send (previously) frozen veggies, turkey meatballs, and I used to make sweet potato pancakes. He loved to rip those up and nosh on them--actually, I bet he still would.

    Pasta is good too--they have lots of little mini pastas, and I would sometimes send some with a bolognese (that might be a little early for C, I'm not sure) or a little homemade mac and cheese.

  • I usually make a batch of food on Sunday and send it for lunches Monday-Thursday. By the time Friday rolls around, I probably have some dinner leftovers I can send. Some ideas:

    - whole wheat pasta, turkey or beef meatballs (easy option is to get the frozen ones from TJs), and veggies mixed together with some italian herbs
    - cut-up pieces of grilled or baked chicken with sweet potato wedges
    - hummus and pita bread, plus fruit - VERY easy and most kids like it
    - sunbutter sandwiches and fruit (alternative to PB if you haven't done nuts yet)
    - mac and cheese with peas or broccoli

    you could probably add chicken to the broccoli and cheese recipe it has

    I also just remembered that quiche freezes really well and is super easy to make ahead.

  • i always do a couple days worth of pasta because it seems to hold up fine and no way in heck am i boiling pasta every day. :) we've been using ditalini, and it's really easy for H to pick up.

    steambag veggies - we eat these ourselves for dinner, i just pop the leftovers in a tupperware and dole them out for the next couple days.

    TJ's has cubed butternut squash. roast it in the oven and freeze it.

    does C like broccoli? i made these but H seems to hate broc so DH and I wound up eating them ourselves. they freeze well too.

    This is my life saver. Every night I pretty much cook dinner for 4 so that there are leftovers for me and C to take for lunch. I've been doing it since he was 9ish months and was done with purees.

    Otherwise, we usually have turkey meatballs on hand and I'll toss that with some frozen mixed veggies.  Or send lunchmeat  and cheese (now I'll send an actual sandwich) with cut up fruit. C also loooves greenbeans and could eat them every day, so sometimes when I'm making dinner I'll make a metric ton, with some onion or garlic and herb de provence, and portion it out for a few days.
