If you have en excellent recipe that is truly vegan, please include it for Hermione. But JKat eats eggs and dairy, and I'm not even a real vegetarian so I will obviously eat eggs and dairy too. So we will make a semi-vegan spread of deliciousness. Who makes some good veggie foods?

mmm yum! Now I'm hungry! My very favorite side dish is potatoes-I like them in many forms but as I said, smashed reds with the skins on are my favorite! I love to throw some cheese in with them.
I need to get the corn/noodle casserole recipe from my mother-its so good and it looks so easy.
I'm a very picky eater, but as long as I know something IS vegetarian and I don't know the other ingredients, I'm willing to try it! (I tend to say I don't like things, when really I've never tried them).
My favorite is a very easy recipe:
1/4 c margarine (or butter, or vegan butter)
1 tbsp sage
2 cloves garlic, finely chopped
1/2 lb Brussel sprouts, cut in half
1/2 lb parsnips, cut lengthwise into quarters, then cut into 2-inch pieces
1/2 small butternut squash - peeled, seeded, and cut into 1-inch pieces
1 bag ready to eat baby carrots
1. Heat oven to 375. In 1-quart saucepan, melt butter. Stir in sage and garlic
2. In ungreased 13x9 pan, place remaining ingredients. Pour butter mixture over veggies. Stir to coat.
3. Cover with foil. Bake 45 minuts. Remove foil, bake uncoverd for 15 minutes or until veggies are tender.
Walla.

Vegan Mac and cheese
i do a very buttery sweet potato dish. it could be made vegan if someone has a butter sub that makes a good pie crust. adapted from this and my mom's recipe.
3 lbs of yams or sweet potatoes
1/2 cup maple syrup
Salt
6 Tbsp chilled butter, cut into 1/2 inch pieces
1/3 cup brown sugar, packed
1 1/2 cups pecans (optional, because my inlaws are picky, so i usually use about a cup of flour)
boil the sweet potatoes in their skins for 1 hr or so, until soft. the skins will slip off easily at this point, so remove them and quarter the potatoes. arrange the quarters in a greased baking dish. pour maple syrup over the yams and bake about a half hour at 350. the day you plan to serve, mix up the chilled butter, brown sugar and flour/pecans, and use it for struesel topping. bake at 400 for 15-20 minutes.
