In the season of apple pie, cider, apple crisp and other delicious apple treats, I really wanted to enjoy something apple and warm and yummy. What did I come up with? Baked apples!!! Easier than pie.....
Preheat the oven to 400 degrees
Core an apple (leave apple whole, just remove the center, leave skin on)
Sprinkle apple center with cinnamon, top with a few pieces of butter. I like to do a little sprinkle of salt on top.
Optional: I also add a very small drizzle of pure maple syrup (real stuff doesn't spike my sugars, fake stuff that is not pure maple syrup does...check you labels). You can also fill the center with nuts like walnut or pecans to add protein.
Add thin layer of water to the bottom of the pan (1/4 - 1/2 cup should do)
Bake for about 35 minutes or until soft.
Enjoy! I had mine with a about 1/4 cup of Breyer's French Vanilla ice cream (1/2 cup = 1 carb).

Watch out: this makes your house smell awesome!!! Totally satisfied my apple dessert craving.
**ETA some recipe clarification and forgotten step about a little water in the bottom of the baking dish.
