IMHO - Potatoes don't freeze the best. The texture comes out weird/off, but it could work with mashed potatoes since you don't notice it as much.
I've made shepherd's pie a few times and frozen it to reheat it. My cheesy potatoes and ham recipe could probably be made with real potatoes but I'm not sure about the texture. I do have an amazing potato soup recipe if you want it, but you mentioned you didn't love potato soup so...
What about oven fries or fries in general? Can those be frozen? I've never tried.
I've made freezer mashed potatoes several times. The recipe I have uses cream cheese, butter, milk, I don't have it in front of me, but they freeze well and reheat really nice too.
Make twice baked potatoes and freeze them! I did this for the holidays last year and served them instead of mashed potatoes. It was one less thing for me to make on Christmas day.
