Weekly Menus

I haven't seen one of these posted in a while so here is mine:

Chicken Tikka masala w/ basmati rice and peas

Chicken Spaghetti Casserole (no olives for us though), roasted broccoli

Smothered Pork Chops w/ spatzle and spinach

And if I get around to it I am planning on making Rachael Ray/Michelle's pumpkin shells.

  • I"m actually cooking at least 3 nights this week!

    I'm not a fancy cook, so I make pretty basic dinners.

    Tonight: Meatloaf, mashed potatoes, green beans

    Monday: Tilapia w/ dill sauce, wild rice, peas

    Wednesday: Country Fried Steak, Mashed potatoes, and corn.

     I'm not a great cook so Zack does all the hard stuff.

     This week:

     French Onion Soup

    Pot Roast, green beans, mashed potatos

    veg beef soup

    Tuna Steaks, brocolli and cheese

    Hamburgers and fries

    Beef stroganoff in the crockpot

     turkey burgers

    spaghetti

     

    I could only dream of being able to make fish....but not in our house!

    I don't have an exact recipe but kind of wing it from the Pastor Ryan Tikka Masala recipe off of PW and this one from Allrecipes.

    It isn't hard at all though, especially if you have the spices on hand.

     

  • been sick, so keeping it lazy this week...

    - feta burgers topped with olive tapenade

    - chili and cornbread

    - cheddar cracker chicken with brussel sprouts

    - loaded baked taters (broccoli, sour cream, bacon bits)  

    - a revolting looking (but super yummy) pasta casserole 

    making herbed cheese and ham pinwheels for a grab and go breakfast for the hubby,  pasta salad for his lunches, and ricotta, pear, and honey sandwiches for me and the kiddo....

  • i'm starting to use pinterest to do my weekly menu planning. my pinterest is all food. hahaha. i have a board of recipes i love, one for recipes i want to try, and then i have a blank board that I repin recipes for the week to.

     this week's menu:

     sun: kielbasa, macaroni and cheese, sauteed cabbage

    mon:  bbq chicken quinoa salad

    tue: herbed turkey meatballs w/ cranberry sauce, mashed potatoes, veggie

    wed: zuppa toscana

    thu: chili

  • This week's menu is a little uninspired because DH and I will both be out one of the nights and I'm still recovering from my mom's visit from this past week.  Haven't figured out the veggies for the week yet either so these are just the main dishes.

    Monday: GNO so DH is grilling hot dogs and chicken burgers for himself and the boys.

    Tuesday: DH has guys' night so Fettucine with garlic and olive oil for the boys and leftovers from Monday night for me.

    Wednesday: Chicken Rollatini with Spinach alla Parmigiana from Skinnytaste

    Thursday: Turkey Chili with Healthy Baked Chicken Nuggets from Skinnytaste

    Friday:  Homemade pizza for Pizza Night

  • Monday: Spaghetti and garlic bread

    Tuesday: Parmesan crusted tilapia, rice and honey carrots

    Wednesday: Chicken (haven't decided how I'm cooking it yet) sweet potato's and green beans

    Thursday: Still debating...

    Friday: Going to be out

    Saturday: Going to be out

    Also, do you make your own spaetzle?  I found investing in a hopper was the best decision ever.  Premade spaetzle is the same price as a hopper.  ($4-6)

    I don't have one but if they have one at Target when I go tonight I am thinking about picking one up.  If not, I might try either the colander method or I've got this contraption from Pampered Chef that I'm thinking might work. If I end up making it from scratch,  I do plan on using your recipe :)  I'll let you know how it turns out!

  • I've never had luck with the collander trick.  I ordered my hopper from Amazon.  I've never seen one in a store, but a Cooks Warehouse might have one, or maybe WS.
