Crock Pot recipes

I just purchased my first crock pot and I'm super excited to use it.  Does anyone have any yummy, easy recipes they would like to share?  Key word is easy..I'm not that great of a cook yet!

    The only thing I do differently is cut up red potatoes and add them in instead of making mashed potatoes on the side. Saves time and dishes! That website has a ton of other crockpot recipes too.

  • I've got a yummy one--- I don't remember where I got it though:

    Put 4 boneless, skinless, chicken breasts in the bottom of the crock pot with salt and pepper (as much as you like)

    Place a slice of cheese over each piece of chicken (I use swiss usually but any kind you like will work)

    Place a cooked piece of bacon on top of each piece of cheese.

    Pour in one can of Campbells condensed cream of mushroom soup (no water)

    Pour in one bag of frozen mixed vegetables

    Top with 1 box Cornbread stuffing mix  and top with a few pats of butter and cook on low for about 7-8 hours.

     

    It turns out almost like a casserole and is SO quick and easy to put together.  Just make sure you don't add any extra water of your stuffing will turn to mush

  • French Dip Sandwiches

    • 4 pounds chuck roast
    • 1 (10.5 ounce) can beef broth
    • 1 (10.5 ounce) can condensed French onion soup (I used the dry French onion mix with an extra can of beef broth)
    • 1 (12 fluid ounce) can or bottle beer
    • Bit of Worchester sauce
    • 6 French rolls
    • Mozzeralla cheese

    Directions

    1.     Trim excess fat from the chuck roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.

    2.     Preheat oven to 350 degrees F (175 degrees C).

    3.     Split French rolls, and cove with cheese. Bake/toast 10 minutes, or until heated through.

    4.     Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.

    ?Baked? Potato Soup 6 large russet potatoes, peeled and cut into ? inch cubes 1 large onion, chopped 3 cans chicken broth with roasted garlic ? cup butter 2 ? tsp. salt 1 ? teaspoons freshly ground pepper 1 cup whipping cream or half and half 1 cup shredded sharp Cheddar cheese 3 Tbs chopped fresh chives 1 (8 oz.) container sour cream (we use low-fat) 4 bacon slices, cooked and crumbled (we use turkey or soy bacon) Shredded Cheddar cheese -Combine first 6 ingredients in a slow cooker. -Cover and cook on high for 4 hours or low for 8 hours ? until potatoes are tender. -Mash mixture until potatoes are coarsely chopped and soup is slightly thickened. -Stir in cream, cheese and chives. -Top with sour cream if desired and sprinkle with bacon and Cheddar cheese.   These are two I made last week.  I LOVE my crock pot, and use it several times a week during the fall and winter months.

  • Chicken Burrito Stuffing 

    2 - 14 oz cans of black beans (drained)

    1 1/2 c frozen corn

    4 boneless skinless chicken breasts

    1 jar (12 to 16oz) your favorite salsa

    Put beans in crockpot & top with corn. Then add chicken & cover with salsa (do not stir). Cook on low 8-10 hours or high 3-4. Shred chicken & mix all ingredients together. Serve on tortillas with tomatoes, sour cream & cheese. YUM!!!!

  • On days where I don't feel like cooking I'll put 3 frozen chicken breasts and about a half to 3/4ths cup of salsa in the crock pot and let it cook on low for 8 to 9 hours.  When you get home the chicken will be so tender you can shred it and use it for chicken nachos, chicken tacos or add some black beans and put it over rice for a burrito bowl.  
  • If you are on facebook, check out Crock Pot Girls.  They have tons of recipes under pictures.  I have tried 2 of them so far.  I tried the to die for crock pot roast:

    To Die For Crock Pot Roast

    1 (4-5 lbs) beef roast, any kind
    1 package brown gravy mix, dry
    1 package Italian salad dressing mix, dry
    1 package ranch dressing mix, dry
    1/2 C water

    *Place beef roast in crock pot
    *Mix the dried mixes together and sprinkle over the roast
    *Pour the water around the roast
    *Cook on low for 7-9 hours

    And the Chicken tacos: I am going to add some taco seasoning next time.  But it was still really good without it.  Also, we used the left over chicken and made quesadillas another night.

    Crock Pot Chicken Tacos

    1lb of frozen chicken breasts
    1 large jar of salsa

  • Really easy and delicious pot roast: 

    1 chuck roast

    1 can Coca-cola

    1 can beef broth 

    1 package dry French onion soup mix 

    Cook on low for 8 hours. Mmmm!

  • I posted this before.  It's soooo good!

    Philly cream cheese, 1 block (8oz)
    1 can of cream of chicken soup
    1 package Good Seasons Italian Dressing mix
    1/2 cup water
    6 boneless, skinless chicken breasts (I used 2 lbs boneless skinless chicken thighs)

    Spray crockpot with nonstick spray. Place chicken in crockpot, mix italian dressing mix and water, pour over chicken. Cut cream cheese into cubes, spread out over chicken. Pour can of soup over all. Cover, cook on low 6-8hrs, or high 4-6hrs.

    I usually serve this over orzo pasta, but it's also good over mashed potatoes!

    It is the BEST cookbook ever and there is TONS of recipes.
