Okay so I kind of wanted to request a PIP for motivation, but I thought you would hate me, so I am going to talk salads instead. I try to eat a salad with protein everyday for lunch.
Favorite things to add to a salad: corn, peas, sunflower seeds, chicken
Favorite things to use instead of dressing: salsa, guacamole, hummmus
Favorite healthier dressing: Newman's Light Balsalmic

I love salads w/ hard boiled eggs (I use one whole and one white only), chick peas, bean sprouts and whatever other veggies I have around. I'll add a little bit of extra sharp cheddar sometimes too. I like to buy the double sharp or whatever it's called, because I feel like a little goes a long way.
Or I'll do a spinach salad w/ bit of crumbled bleu or goat cheese, a few chopped pecans and some dried cranberries or cherries (but they are high in sugar, so I make sure to only use a few.)
I also love to make taco salads w/ leftover taco toppings- ground turkey, guacamole, crumbled (baked) tortilla chips and sour cream/salsa mixed as dressing.
I make all my own dressing, so they are pretty healthy. Ranch has been a favorite lately (made w/ ff greek yogurt, lowfat buttermilk, lowfat mayo) or if I do a vinaigrette I use more vinegar than oil... that way it's super tangy so I only need a little. Plus I have a bottle of specialty EVOO that I use just for dressing (my mom won it in some Wegmans basket, and it retails there for like $18!) and it really makes a difference in the flavor.
Absolute favorite - caprese salad with fresh basil and a splash of good balsamic. Yum!
Next would be a salad similar to Nik's - spinach, goat cheese, toasted walnuts, craisins, and a little bit of balsamic vinegrette. Otherwise, I am happy with some grilled chicken or tuna salad (made with low fat mayo) on greens with other veggies thrown in.
