I have a Babyhawk Mei Tai, and while baby and I both love it, it is slightly inconvenient because it takes such a "process" to put it on and take it off. What are some "easy" baby carriers that I could simply put baby in and take baby out within a second or two?

I think it's pretty subjective which ones are "easy." You'll probably find that the more that you use the carriers, the less of a "process" it is for you. Also, it will be less of a process as your LO gets older and a) has more control over his body and b) works with you, as he gets used to being worn and knows what's going on.
If you like mei tais, but find that they take too long to get off and on, then you'll most likely like soft-structured carriers. I can't link to it now, 'cause TBW is down. You might also find that ring slings are very easy to pop your LO in and out of.

I really liked the bjorn for smaller babies in terms of ease of use. I think once they hit that 15-20lb mark, it starts getting uncomfortable if you wear baby for a long period of time. I really liked the bjorn active model in terms of comfort since it has extra lumbar support, which the original did not have.
Now that my DD is older, I've upgraded to an ergo. Its not as easy as the bjorn, but still pretty simple. The only learning curve with it is getting all the straps adjusted for a perfect fit, but now that I've been using it everyday multiple times a day, it's a piece of cake.
