We made Honey Garlic Chicken the other night and it was awesome and cheap.
1/2c each of ketchup, honey and low sodium soy sauce, 3 cloves of chopped garlic, 1.5-2lbs of skinless chicken thighs (bones optional). Put it all in the crockpot for 3-4 hours on high, or 6 on low. Serve with brown rice and a steamed or fresh veggie. The sauce makes a good sauce for veggies too, so you don't have to season them. DH suggested I add a bit of ginger next time.
We have been doing a lot of double batch vegetable soups, lentils, chili and then I freeze the leftovers. I also love whole chicken with herbs and veggies in the crockpot. Soy free veggie stirfry is always a big hit. Fish filets with lemon, garlic, ghee and basil. We were doing veggie omlettes but had to take dd off of eggs again I have a salad cookbook that I love and it keeps things interesting for our nightly dinner salads. I've been cooking using my nourishing traditions cookbook and so far every single thing I've made out of it has been a huge hit. It's more challenging with busy season here to find the time to be in the kitchen. I'm trying to keep up but it's hard.
Right now, everything I eat is relatively cheap, but super easy and healthy. I use our infared propane grill a lot, so not sure if that is an option for you, but I love throwing a filet of salmon on there with some zuchinni. Other favorite fast veggies are frozen peas & green beans, which I just throw in a pot with some water and they are done in no time. I don't season anything except for olive oil on the grill. We also love asparagus. I find it best to steam (as well as brocolli, but I also like cooking those in the oven). I also love steamed carrots and sauted in a little coconut oil. I also like grilling chicken on there and making a salad. I eat avacados with everything and make guacamole almost every time. I always buy avacados in "bulk" at HEB or costco. I think that is about it. That is my life as far as eating food goes, along with some soups I make but they are not really all easy or that family friendly.

I feel ya...I'm feeling a little scattered lately and I know this is just the beginning! I'm going to try to dedicate some time this weekend to freezing some meals for the boys - they're so much pickier than I am...I'm good with eggs and spinach for dinner!

i need to write up a recipe... but one of my weeknight meals is to saute diced chicken with a can of drained/rinsed black beans, frozen corn, diced onions, (sometimes peppers if i have them). Season with salt, pepper, garlic, & cumin. Oh and i toss in a can of green chiles if i have them. We typically eat it over brown rice.
another easy one -- make foil packets for the grill with tilapia. i usually put a sliver of butter (seriously almost paper thin) cause it adds a good bit of buttery flavor although olive oil works too. Season with cajun seasoning or lemon pepper. toss on the grill and grill up some veggies along side. we have those a lot!

Season with salt, pepper, garlic, & cumin. Oh and i toss in a can of green chiles if i have them. We typically eat it over brown rice.
we do this a lot too, with a can of diced tomatoes(with green chiles), I often use leftover chicken, or none at all. I make cornbread to go along with it instead of rice, and add some chedder on top
