3 chicken breasts... gimme a recipe

I have 3 boneless skinless breasts thawed for dinner. I have no appetite and no ideas... what do I make for dinner?

I think I have all of the staples handy... except no cheese in the house.

  • Put them in a bag with either barbecue sauce or an oil-based salad dressing for an hour, then throw them in the oven or on the grill. It's simple and easy. Have rice and then some broccoli/beans/peas with it.

  • We're doing Grilled Chicken Taco Salads tonight.  Low Sodium taco mix used to marinate the chix breast and then dh will grill them.  I'll build a healthy taco salad with lettuce, tomatoes, black beans, avacado, salsa and low fat sour cream (minus the taco shell but may a few baked tortilla strips).  We're on a GD diet so our limitations will probably be more strict than other peoples.

  • I would probably cut up the chicken breast, season it with garlic salt,  cook it in some olive oil with mushrooms. Then throw it in some noodles with alfredo sauce. Serve it with a tossed salad and call it good.

  • chicken salad or chicken salad sandwiches??

I like to put halved grapes, pecan pieces, chopped celery, mayo, salt, and pepper in mine.  I also typically skip the sandwich part and make a box of wild rice and mix it in with the salad instead (in which case I skip the salt).  It's yummy, especially with rolls.

  • Sounds gross, but it's really yummy-I promise!!! Mix together a can of whole cranberry sauce, dry onion soup mix and either russian, catalina or french dressing (a small bottle).  Throw it over the chicken breasts and then cook.  Quick, easy and sooooo good!

  • You could make them chicken wing style minus the bone.  You dip in flour, then egg, and then bread crumbs (my favorite is panko) and put on the broiler.  Then we like to drizzle a little Texas Petes hot sauce and ranch dressing over. Serve over salad or just on a plate with another side.

  • I have a great recipe for chicken breasts - but you're going to have to trust me because it might sound weird at first, although it's DELICIOUS:

1 can whole berry cranberry sauce
    1 bottle French dressing
1 packet French onion soup mix

Combine everything, let it marinate for a while, and then bake on 375 until the chicken is done and a nice, delicious gravy is made.

A side of mashed potatoes goes perfectly!

    Yum, now I want this...
