XP: Share your favorite recipes

I'm starting to watch a 2 year old 2-3x per week for 10 hours per day (in addition to almost-two DS), starting tomorrow.  I need quick, easy, and delicious recipes.  We don't eat fish, and rarely eat red meat.  We stick to chicken, pork, and ground turkey most of the time.

    Crock pot turkey chilli: 

    1 pkg of ground turkey

    1-sweet onion-chopped

    Brown the meat with the onions 

    1 28 oz can of crushed tomatoes

    1 8 oz can of tomato sauce

    1 pkg of store bought chilli seasoning.

    1-green bell pepper chopped

    1-red bell pepper chopped

    Frozen corn I just toss in a 1/4 of the bag or so

    1 can of black beans drained and rinsed.

    Cook in crock pot on high for about 5 hours.

    This freezes really well and I serve over a baked potato, w/corn bread or just crunch up tortilla chips.

    2 of my favorites involving chicken and the crokcpot.

    cheesy mexican chicken in the crockpot:

    In a crockpot throw one can corn and one can black beans (drained). Throw 3 or 4 frozen chicken breasts on top. Cover with a jar of your favorite salsa.

    Cook on high for 4 hours.

    When chicken is cooked through, set crockpot to warm and add one package of cream cheese into mixture. Once cream cheese is softened, shred chicken and mix all ingredients together.

    Serve over mexican rice or as a filling for enchiladas.

    The leftovers make a great topping for nachos!

     

    slow cooker cordon bleu:

    6 skinless, boneless chicken breast halves
    1 (10.75 ounce) can condensed cream of chicken soup
    1 cup milk
    4 ounces sliced ham
    4 ounces sliced Swiss cheese
    1 (8 ounce) package herbed dry bread stuffing mix
    1/4 cup butter, melted

    Mix together the cream of chicken soup and milk in a small bowl. Pour enough of the soup into a slow cooker to cover the bottom. Layer chicken breasts over the sauce. Cover with slices of ham and then Swiss cheese. Pour the remaining soup over the layers, stirring a little to distribute between layers. Sprinkle the stuffing on top, and drizzle butter over stuffing. Cover, and cook on Low for 4 to 6 hours, or 2 to 3 hours on High.
