Preschool Lunch

So DD is going back to preschool this year, actually tomorrow is her first day, and we just found out that she will have a classmate that has a severe peanut allergy, so that means no peanut butter/jelly for lunch.  DD is a little picky, usually for lunch we would pack her a peanut butter/jelly or ham sandwich, some carrots, some sort of fruit cup, fruit snacks and a drink. 

Any ideas?  They do have a microwave so we could do something that needs to be warmed up.  I would prefer not to make it a huge issue for the staff to deal with.

    Can you do variations on sandwiches, like pita pockets etc. with something else - cheese, meat, veggies, etc?

    Our preschool just does a snack, not a lunch, because it is only 9-12 or 8:30-11:30.
