zucchini bread?
Anyone have a good, go-to recipe? I have been Google-ing and checking all my favorite cooking blogs, but nothing screams "bake me!"
I have a couple (huge) zucchini from my neighbor... and we are sick of our normal grilled marinated route. I made some stuffed zucchini last week, and another summer squash and tomato recipe over the weekend. I'm thinking using the rest to bake something is the way to go!

I don't really have a go to zucchini bread recipe. I do like to make poor man's crab cakes out of zucchini- it's just grated zucchini, egg, mayonnaise, breadcrumbs and Old Bay seasoning.
Would you mind sharing the summer squash and tomato recipe? We have so much summer squash from our CSA and I'm also sick of the grilled marinated thing.
It's really not a recipe, I guess... just something my mom always made. But I just sauteed up some zucchini and yellow squash, w/ some thin sliced onion and a few cloves of minced garlic (in olive oil), then once it's a little browned and cooked down add a (14-15oz) can of diced tomatoes and let it cook for 10-15 minutes till the juices reduce a bit. I topped it w/ some fresh basil and a little bit of crumbled goat cheese.
Those poor mans crab cakes sound good! I might make them to go w/ our dinner tonight.
Oooh, that sounds really good. I think I even have all the ingredients for it, so I might make that tonight. Here's the crab cake recipe I use- they really do taste a lot like crab cakes!
2 cups grated zucchini (I use a little more)
2 beaten eggs
1 cup seasoned bread crumbs
2 Tbsps mayo
2 tsp Old Bay seasoning
Mix everything together, shape into patties and fry in some olive oil.
I made this bread the other day and it's really good! It's a bit sweet though so I'll cut down on the sugar the next time I make it.

I'm going to have to make that! My MIL was just oooing and awing over a blueberry-zucchini bread a friend of hers made.
It'll have to wait till tomorrow, since Evan has eaten all the blueberries! So instead I made some banana bread!
I was in the mood to bake, and we had some super ripe bananas. Can't wait for breakfast tomorrow... or maybe dessert tonight (w/ some Nutella!)
I was stuffed from dinner but this recipe just made me SO hungry! Now I want to make zucchini bread! Maybe this is how I can get Chelsea to start eating some veggies...hmm....
I made zucchini bread for Ian last week, and even though I wasn't too thrilled with the recipe, he gobbled it up! First veggies other than corn to go into him in weeks!
