Recipe Monday!

In honor of Recipe Monday frequent contributor and all around awesome TTGPer Squishy and her exciting BFP, let's see your recipes with rice!  Served with rice, made with rice, the letters R, I, C, and E in the recipe name...whatever involves rice!
Fun question: What is your favorite kind of cheese and how do you like to eat it (plain, on crackers, grilled cheese, etc.)?

    Brunost is my other fav, a Norwegian cow & goat milk cheese that tastes vaguely like caramel...mmm!

  • This is one of my favorite dishes with rice...the cilantro lime rice is soooo good. We actually had it for dinner last night and I can't wait for lunch to have the leftovers! If you've ever gotten a burrito bowl at Chipotle, it is very close! Just one more reason why I love Annie's Eats!     I had Chipotle yesterday!!  So YUM!!  I love the rice!

    I use this recipe for stuffed peppers https://allrecipes.com/Recipe/stuffed-peppers-4/detail.aspx (hope my clicky works!!).  I substitute wild rice for white rice and instead of ground beef I buy "wine and cheese" flavored sausage from Wegman's remove the casings and brown that.  It's easy to make and there are always leftovers that are good for lunches!

    I'm not a huge fan of cheese by itself but I love it melted on things...burgers, pizza, sandwiches, etc.

  • I love Risotto, but really don't have the patience to make it. This one is pretty quick and really easy!

    I have 2 to share: One of my all-time favorite dishes and so appropriate for the season, Heirloom Tomato Risotto with Fresh Mozzarella. And this Veggie Fried Rice is healthy, customizable, and so delicious!

    And I've really been digging brie lately, especially baked brie with some kind of jam or fruit. NOM. I heard some nonsense about a soft cheese taboo in pregnancy though, I'm going to have to look into that. Stick out tongue

  • yum, i would post a similar recipe to the broccoli-cauli casserole posted by krysbb521 sounds just like the one my MIL makes. delish, but no cauliflower in hers. 

    fave cheese - brie. hands down. we had the stinkiest hunk in Paris and it was AMAZING. DH didn't love it, i scarfed it down.

    I love broccoli and cauliflower together.  I wish DH liked cauliflower because I'd eat them together all the time!

    I have two, the first is a rice side and the second is a dish served over rice:

    Pineapple Rice  (didn't like the patties, but the rice is amazing)

    Three-Pepper Beef

    Fun question: This is hard since I love cheese.  But I'll say Parmigiano Reggiano---it's so good on things, in things, and I love eating it plain too.  I'd give Dill Havarti an honorable mention because it's my favoirte cheese for grilled cheese sandwiches.
