Appetizer recipe help!

I need something new. We split up dinners on our camping trip - everyone takes a night. But those of us with the youngest kids just have to chip in where they can. So for SIL#1 I'm making dessert (strawberry shortcake) and for SIL#2 I need an appetizer. They are going to make chicken kabobs I guess.....assuming with something like salt potatoes.

So what should I make for an appetizer? Or two. It can't be too out there because we either have to bring the ingredients or count on them being at the small IGA 45 minutes away from the campground.

  • what about fresh tomatoes and mozz with balsamic drizzle? guacamole dip?

    or what about various maushrooms, artichoke hearts- think antipasta- esque

  • I always get compliments on my chicken quesadillas- super easy to make and they reheat well. You could make and then cut them at home, then heat them up when you get there.
