My 3 yr old has a thing for opening the fridge and making a mess, when im still asleep or when im not looking for example if im taking a shower, he eats his 3 meals a day so i dont think hes hungry, what he does is he opens the fridge grabs any fruit , bites it and leaves it there. any suggestions

Hmmm. Maybe ask him before you shower if he wants a snack.
You can also leave a small fruit basket (or snack basket) out on the table were your LO can reach, and that way they can help themselves when hungry without leaving half-eatened fruit in the fridge.
3 meals a day actually isn't enough for a growing toddler, they snack frequently also
how long is he awake before you get up to feed him? he probably can't wait so he's taking matters into his own in that case
as far as when you're showering, i'd set him up with a snack before you go in
since he's just taking one bite of some foods and putting them back, i'd say he's just trying it out and i wouldn't be concerned about it. try offering him the same food again later
We have a low cabinet that is stocked with all of DD's dry snacks- yogurt melts, graham crackers, squeezable apple & fruit sauces, raisins, goldfish, cereal, etc. She can graze from there whenever she wants if I am not in the same room and it's not a big deal if she starts something and doesn't finish it right away.
I don't like the idea of her opening and closing the fridge because it wastes energy (I'm sure she would do it 80 times/day if she thought it was okay to do on her own) and because the stuff in there is messier to eat unsupervised, like yogurt, or just not appropriate as a snack (she got into a tub of butter once and made her way through most of it- yuck).
