I have a cobbler recipe where you mix up a bisquick type batter (but it's really just flour and sugar and butter maybe?) and then you put berries on top and when you cook it, the 'crust' seems to somehow rise through it and make a topping. So I think that kind of batter is what I think of for "cobbler". I think a crumble topping is a "crisp".
