we're having a friend over tonight and he's bringing his new girlfriend. this is our menu so far:
grilled steaks, marinated in our favorite ginger, garlic, soy sauce mixture
grilled bread
grilled corn with chile lime butter
spinach salad with bacon, mandarin oranges, red onions, and mushrooms
im not making dessert b/c everyone else is planning to drink a lot and i'm making lemonade with raspberry ice cubes (thanks, pinterest) for myself.
i feel like i need an app to have out when they get here to snack on. i dont want to just do chips and a dip, unless it's something really yummy and not just salsa or guac. i also want to limit the bread b/c i want to eat a ton of the bread we grill for the main meal. any ideas?

How about a fruit and cheese plate? Some berries surrounded by your 2 or 3 favorite cheeses, and some water crackers. Easy, but can be pricy, depending on the cheese.
Or maybe tomato basil mozzarella skewers.
Or shrimp cocktail, if you're feeling fancy. :-)
This stuff is like crack and I never have any left when I make it.
Easy layered mexican dip
2 packages of cream cheese - room temp
1 can of no bean chili
2-3 small tomatoes
1 bunch of scallions
1 bag of shredded cheese
preheat oven to 350
1. Spread the cream cheese in the bottom of a casserole type dish.
2. empty the contents of the chili on top of the cream cheese.
3. dice the tomatoes and onions and spread on top of the chili.
4. pout entire bag of shredded cheese over the top of the dip.
5. cover with foil and bake for 20 minutes. Serve warm.

He loves those.
I'd do hummus and baby carrots and celery. It's so easy. If you want to make your own hummus (very inexpensive), here's what I do.
1) Get a big can of Goya chickpeas and one of those little squirty bottles of lemon juice (a few oz.).
2) Drain and rinse the chickpeas, then put them in the food processor with the lemon juice.
3) While it's running, and after it's pureed the chickpeas, add a drizzle of olive oil until you like the consistency.
If you have tahini on hand, add a TBS or so. But I don't think it's that necessary.
