Our mattress is waterproof but I still plan on using a pad. I sweat terribly at night and having a summer baby I'm afraid she may as well. The pad is more of a buffer between the plastic and the sheet so she doesn't get as hot and sticky.

I agree, I'd still get a pad so LO doesn't get all hot and sticky especially since most crib sheets are so thin. I know I get hot and sweaty napping on a leather couch for too long, imagine how plastic would feel.
My son has a waterproof mattress (and has since he came home from the hospital a year ago), and I have never had a problem not using mattress pads at all. Waste of money and unnecessary laundry IMO.

ours is too but we have 2 mattress pads b/c of accidents at night/during naps/etc. - figured it was worth the cost to make life easier! Plus we have a convertible crib so LO will be using it for awhile! I used coupons from BRU...
Without a pad, the moisture is absorbed by baby's clothes. With a pad, it helps to pull some of that away from baby's skin. The waterproof part is more for convenience of cleaning up afterwards.

I still plan on using a mattress pad. I use the carter's deluxe one at BRU.
