  I'm totally butting in.  Thanks for posting this. I will be making this over the weekend. DH loves chipotle's rice. Now if I could just copy their burrito he'd probably kiss the sand outside our door, thorns and all!

  Sorry, I do the first recipe and mix in the chopped up cilantro at the very end after the rice is cooked.

  I am sooo glad we saved the left over cilantro leaves from making fajitas today. There should be just enough for a batch or two.
